Lime Cordial

Turn an abundance of limes into a homemade lime cordial you can add to water or cocktails.

Ingredients

  • 6-8 lime they should weigh around 500 grams in total and yield 200-250ml juice
  • 2 teaspoons tartaric acid
  • 2 ½ cups caster sugar or white sugar
  • 2 cups water

Instructions

  1. Juice limes. Add tartaric acid and stir to combine.
  2. Use a fine grater to get zest from two of the limes.
  3. Add sugar, zest and water to a saucepan. Stir over medium-high heat until the sugar dissolves and the mixture is about to boil. This should take about 5 minutes. Remove mixture immediately from heat.
  4. Allow sugar mixture to cool for 15 minutes and then pour the sugar mixture over lime juice mixture and leave for another 15 minutes.
  5. Strain mixture using a muslin cloth, pour into a bottle (using a funnel if necessary) and place the lid on the bottle.

  • Serving: Enjoy mixed with water or soda water, using 1 part cordial to 4 or 5 parts water.
