A healthy Whole30 and low carb friendly twist on a traditional bar snack.

Ingredients
- 16 oz container of dill pickle chips
- 2 eggs
- 1/2 cup coconut flour
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 tsp garlic powder
- 1 1/2 cup ground pork rinds or pork panko
Instructions
Air Fryer Instructions
- Prepare a breading station by combining coconut flour with salt, pepper, and garlic powder, whisk eggs together in a shallow bowl, and place ground pork rinds in a separate shallow bowl
- Drain the liquid from the pickles
- Bread each pickle individually by tossing the pickle in the coconut flour mixture, then the egg and finally the ground pork rinds
- Preheat the air fryer at 400F for 5 minutes prior to cooking the pickles
- Arrange the breaded pickles in the air fryer basket so there is a bit of space between each one
- Air fry for 5-6 minutes and remove from the air fryer
- You may need to cook them in batches until all are fried!

- Preheat the oven to 425F and line a baking sheet with parchment and place a wire baking rack on the baking sheet

- Drain the liquid from the pickles
- Bread each pickle individually by tossing the pickle in the coconut flour mixture, then the egg and finally the ground pork rinds
- Arrange the breaded pickles on the wire baking rack so there is a bit of space between each one
- Bake for 10 minutes or until the pickles reach their desire crisp
