Ingredients
- 3 cups cauliflower florets
- 1 cup frozen spinach thawed
- ¼ cup cream
- ½ medium avocado
- 4 tablespoons butter
- ½ cup sour cream plus additional for topping
- ½ teaspoon salt
- fresh black pepper to taste
Instructions
- Combine cauliflower and spinach in a microwave safe bowl or a saucepan and cook until cauliflower is very tender, about 15 minutes.
- Add cream, avocado, butter, sour cream and seasonings and blend with an immersion blender (or place carefully in your food processor and blend) until smooth.
- Top with sour cream if desired and serve immediately.
