Low Fodmap Chicken Fajitas – very easy to make and gentle on your tummy! Serve hot with home-made Low Fodmap Tortillas, fresh coriander leaves, lactose-free sour cream, and lime juice.

Marinade
- 120 gms – ¼ lb. chicken sliced (I use chicken tenderloins)
- 1/3 tbsp garlic infused oil
- 1/3 tbsp lemon juice
- 1/4 tsp salt
- 1/4 tsp oregano
- 1/4 tsp cumin powder
- 1/8 tsp coriander powder
- 1/8 tsp paprika
Fajitas
- marinated chicken
- 1/3 tbsp garlic infused oil
- 50 gms red capsicum 1/3 of a medium capsicum/pepper, sliced
- 1.5 spring onion green parts only, chopped
- salt to taste
- tortillas
- Coriander leaves
- Lactose-free sour cream
