Mandarin Chicken Pasta Salad

Ingredients

Mandarin Dressing

  • 1/3 cup rice vinegar
  • 1/4 cup orange juice
  • 1/4 cup vegetable oil
  • 2 teaspoons toasted sesame oil
  • 2 teaspoons sugar
  • 1 teaspoon ground ginger
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Pasta Salad

  • 8 ounces rotini pasta , cooked and drained
  • 1 cup cucumber , peeled, seeded, and cubed
  • 1 red bell pepper , diced
  • 1/4 red onion , minced
  • 1 medium carrot , shredded
  • 2 cloves garlic , minced
  • 2 cups chicken breast , cooked and diced
  • 11 ounce can mandarin orange segments , drained
  • ½ cup sliced almonds , toasted

Instructions

  1. To make the dressing, whisk together rice vinegar, orange juice, vegetable oil, sesame oil, sugar, ground ginger, garlic powder and onion powder until smooth.
  2. In a large bowl add the pasta, cucumber, red bell pepper, onion, carrot, garlic and chicken.
  3. Toss well with the dressing until well coated.
  4. Refrigerate 1 hour before serving.
  5. Garnish with mandarin oranges and sliced almonds.
