  • 1 cup tapioca pearls cooked
  • 1 tablespoon brown sugar
  • 1 ½ cup water boiling
  • 2 bags green tea
  • 2 Mango cubed or 2 cups of frozen mango, ripe
  • 1 ½ cups plant-based milk
  • ¼ cup ice optional

Instructions

  1. Mix the cooked tapioca pearls with the brown sugar and set aside.
  2. In a mug, add the boiling water and tea bags. Let them sit covered for 5 minutes. Set aside.
  3. To a blender, add the mango, plant-based milk, and tea. Blend for 2 minutes until completely smooth.
  4. Add the tapioca pearls to a glass. Pour in the mango tea mixture. Add ice if using.

Notes

  • Use water around 80°C (175°F) to prevent the green tea from becoming bitter.
  • Prefer ripe or frozen mangoes, or quality mango puree, especially when fresh mango is out of season.
  • Adjust sweetness by adding more sweetener if the mango isn’t sweet enough.
  • Consume tapioca pearls within 3-4 hours of cooking and keep them in liquid to maintain their texture.
