  • 1 cup tapioca pearls see notes
  • 6 cups water divided into 5 cups and 1 cup
  • 3 tablespoons natural cane sugar
  • 1 ripe mango
  • 1/2 cup evaporated milk
  • 1 black tea bag see notes
  • 2 tablespoons sweetened condensed milk
  • crushed ice add to taste

Instructions

  1. Steep the black tea in hot water for the time specified by the tea brand. Once ready, remove the tea and allow it to cool to room temperature.
  2. Bring water to a boil in a medium-sized pot over medium heat. Once boiling, add the tapioca pearls, stirring occasionally to prevent them from sticking to each other.
  3. Follow the cooking time recommended on the package for the tapioca pearls, some cook quickly while others can take up to 30 minutes. After cooking, remove the pot from heat and let the pearls rest in the water for an additional 30 minutes. This way, they’ll be real chewy and soft.
  4. Drain the pearls using a sieve and rinse them under water.
  5. Place the rinsed pearls into a mixing bowl and mix well with natural cane sugar.
  6. In a blender, combine the cooled tea, evaporated milk, sweetened condensed milk, and slices of fresh mango. Blend these ingredients until the mixture is smooth.
  7. In a serving glass, add your desired amount of sweetened tapioca pearls and a layer of crushed ice. Pour the blended mango mixture over the ice and serve with a large straw. Enjoy!

  • Tapioca pearls - The black pearls are boiled in water until they're the perfect texture. You can get these at Amazon or any Asian supermarket.
