Maple Dijon Chicken Thighs

Maple Dijon Chicken Thighs feature boneless, skinless chicken thighs baked in a marinade of Dijon mustard, real maple syrup, olive oil, soy sauce, garlic, and rosemary. The slow oven roasting produces tender, juicy meat with a sweet, tangy glaze that caramelizes under a final broil for a golden brown finish. The dish offers a balanced savory and sweet flavor with aromatic herb notes.

Description

This recipe highlights chicken thighs marinated in a blend of Dijon mustard, maple syrup, olive oil, soy sauce, minced garlic, and rosemary. The combination infuses the meat with a mixture of tangy mustard sharpness, natural sweetness from maple syrup, savory soy sauce umami, and fragrant herbs.

The thighs are arranged in a baking dish close but not overlapping and coated thoroughly with the marinade. Baking at 375°F for 45-50 minutes cooks the chicken through while allowing the marinade to reduce and mingle with the chicken's natural juices. The final step involves spooning pan juices back over the meat and broiling briefly to create a caramelized, crisp exterior without drying the meat.

These chicken thighs can be served alone or alongside sides like roasted vegetables or rice. The interplay between mustard's mild heat and maple's sweetness makes the dish versatile for everyday meals or casual gatherings.

Ingredients

Servings
  • 1/4 cup Dijon mustard $0.36
  • 2 Tbsp maple syrup $0.60, real
  • 1 Tbsp olive oil $0.13
  • 2 tsp soy sauce $0.04
  • 1 clove garlic $0.08
  • 1/2 Tbsp rosemary $0.30, or fresh
  • 6 chicken thigh $5.19, boneless skinless, about 2.3 lbs

Instructions

  1. Preheat the oven to 375ºF. In a small bowl, stir together the Dijon mustard, maple syrup, olive oil, and soy sauce. Mince the garlic and chop the rosemary. Stir both into the marinade.
  2. Arrange the chicken thighs in the dish so that they are close, but not overlapping. Pour the marinade on top and then spread it around until the thighs are completely covered.
  3. Bake the chicken thighs in the preheated oven for 45-50 minutes, or until they are cooked through and the liquid around the thighs is simmering. Spoon some of the liquid over the thighs, return them to the oven, then switch the oven's setting from bake to broil. Broil for about 5 minutes, or until the top of the chicken is golden brown. Watch the chicken closely as it broils, as broilers can vary.

Notes

  • After baking, use a spoon to baste the chicken with the cooking juices instead of a brush to preserve the glaze.
