Ingredients
For Maple Roasted Peaches
- 2 peaches
- 2 tablespoons olive oil
- 2 tablespoons maple syrup
- salt + pepper
For Salad
- 15 oz baby greens
- 1/4 cup toasted almonds
- 2 tablespoons dried cranberries
- 1/2 cup cherry tomatoes
- 1/2 cup cucumbers
- 1 oz Parmesan Cheese
- maple roasted peaches
- salt + pepper
- vinaigrette
- 1/2 cup olive oil
- 1/4 cup red wine vinegar
- 2 tablespoons maple syrup
- 2 teaspoons Dijon mustard
- salt + pepper
Instructions
- For Maple Roasted Peaches
- Preheat oven to 400 degrees Fahrenheit
- Cut peaches in half. Remove the pit and cut into slices
- In a bowl toss the peaches with the maple syrup, olive oil, salt and pepper until the peaches are completely coated
- Spread peaches on a greased sheet pan and roast for 15 minutes
- Flip the over and roast for 15 minutes more
- Remove from oven and let it cool for a few minutes
- In a small bowl, place all the vinaigrette ingredients together and mix vigorously using a whisk
- In a salad bowl place all the salad ingredients and slowly add the vinaigrette until your desired flavor is achieved (you may not need all the vinaigrette)
- Serve and enjoy!
