Margarita Popsicles Recipe

This recipe creates margarita-flavored popsicles featuring tequila, triple sec, and freshly squeezed lime juice. The mixture is boiled briefly, cooled, then poured over lime slices in molds, sprinkled with kosher salt before freezing. The resulting popsicles combine tart lime with the warm notes of tequila and orange liqueur, delivering a cold, boozy treat with a hint of saltiness.

Description

The Margarita Popsicles Recipe blends tequila, triple sec, and fresh lime juice into a frozen dessert that balances tartness with the spirituous warmth of the alcohol. After boiling the spirits briefly to blend flavors and slightly reduce alcohol potency, the mixture is cooled and poured onto lime slices set in molds. A touch of kosher salt adds contrast, highlighting the citrus notes. Freezing the popsicles solid over 24 hours results in a refreshing adult treat that can be easily unmolded by briefly warming the mold with hot water.

The method emphasizes careful measurement and room for expansion in the molds, preventing overflow or freezer mess. These popsicles provide a unique way to enjoy a margarita in a compact, portable frozen form, suitable for serving at summer gatherings or casual parties.

Ingredients

Servings
  • 1 ¼ cups tequila
  • 1 cup triple sec
  • ¾ cup lime juice freshly squeezed
  • 2 lime sliced
  • kosher salt or other coarse specialty salt, a sprinkling

Instructions

  1. Boil the tequila and triple sec in a small pot for 2 minutes. Remove the pot from the heat, stir in the lime juice, and let the mixture cool.
  2. Put a slice of lime into each ice pop mold then carefully pour the tequila mixture equally between your ice pop molds. Do not fill the molds to the top; leave a small amount of space to allow for expansion when the liquid freezes or your freezer may receive an icy margarita bath.
  3. Sprinkle a very small amount of kosher salt into each pop. Top with ice pop sticks or reusable ice pop tops with attached sticks. Let the pops freeze for at least 24 hours. To unmold the pops, run them under hot water for a few seconds.
