Ingredients
- 2 boneless skinless chicken breasts
- salt and black pepper to taste
- 1 1/2 TB olive oil for cooking
- 2 garlic cloves minced
- 1/4 cup sun-dried tomatoes chopped
- 2-4 cherry tomatoes halved
- 2 prigs fresh thyme
- 1/2 teaspoon red pepper flakes or Chili Flakes
- 1 cup chicken broth or vegetable broth
- 1/2 cup heavy cream or Double Cream
- 1/3 cup cheddar cheese shredded
- basil for garnish
Instructions
- Preheat oven to 375°F. Season chicken with salt and pepper and allow to rest for about 10 minutes.
- Heat a medium skillet with 1-2 Tablespoons olive oil. Cook the chicken for about 5 minutes on each side, then transfer the chicken to an oven-safe dish.
- Add chopped garlic and thyme to the hot skillet and cook for 1 minute. Add the two types of tomatoes to the pan.
- Add the broth, cheese, and pepper flakes to the pan. Bring this mixture to a boil, stirring occasionally.
- Pour the creamy sauce into the baking dish with the chicken. Bake uncovered at 375°F for 15 minutes.
