Description

Masala Tea is made by boiling water infused with grated ginger and crushed cardamom pods, adding black tea leaves and simmering until the brew darkens. Whole milk is then incorporated and brought to a gentle boil, with sugar added for sweetness. The simmering allows the flavors of the spices to meld into the rich tea base, creating a balanced and fragrant cup.

The optional frothing technique involves repeatedly pouring the tea from one vessel to another to generate a frothy top layer, adding a pleasing texture. After straining out the whole spices, the tea is served in cups, ideal for breakfast or afternoon relaxation. Assam black tea leaves provide a robust foundation for the spices, complementing their sharpness and warmth.

Using unbleached tea bags is recommended if opting for bagged tea to avoid possible chemical residues. The recipe allows adjusting sugar levels to suit personal taste, ensuring an adaptable, cozy spiced tea experience.

  • 350 ml water 1½ cups
  • 2 teaspoons tea leaves use a black tea like Assam
  • 240 ml milk 1 cup, whole
  • 1 inch ginger grated or minced
  • 2 pods cardamom crushed
  • 2 teaspoons sugar adjust to taste

Instructions

  1. In a small saucepan, bring 350 ml water to a boil with 1 inch ginger and crushed 2 pods cardamom.
  2. Add 2 teaspoons tea leaves and simmer for two minutes.
  3. Once the tea has darkened, pour in 240 ml whole milk and bring to a boil again.
  4. As the milk starts to boil, turn heat down to medium-low, add 2 teaspoons sugarand simmer for another minute then remove from the heat.
  5. To create a frothy layer on the tea (optional), pour from the pan to a similar size pan or large measuring cup from a height without spilling it. Then pour it back again and repeat till a foam appears on the surface of the tea. Strain away the whole spices and serve in cups.

Notes

  • Use Assam or similar black tea leaves for a robust base.
  • Choose unbleached tea bags to prevent unwanted flavors when using bagged tea.
  • Sugar amounts can be adjusted to taste for preferred sweetness.
