Instructions

Pizza Dough

  1. If preparing homemade pizza dough, combine the flour, sugar, yeast and salt in a large bowl.
  2. Add the water and 2 tbsp olive oil, combine until a ball of dough forms.
  3. Add more water if too dry or more flour if too sticky.
  4. Place on a floured surface and knead for 4-5 minutes.
  5. Place the dough into a large bowl coated with the remaining 2 tbsp olive oil.
  6. Cover with plastic wrap and allow to rise for 1 hour.

Mashed Potato Pizza

  1. While the dough is rising, prepare the roasted garlic. (If using garlic mashed potatoes, you can skip this step.)
  2. Preheat the oven to 400°F.
  3. Peel most of the paper off the garlic, then trim the top of the head of the garlic off.
  4. Drizzle with 1 tsp olive oil, wrap in foil and roast for 40 minutes.
  5. Once the garlic is roasted, press on the bottom of the paper to remove the cloves, add to the mashed potatoes and stir to combine.
  6. When the dough has doubled in size, punch it down and divide into 4 pieces.
  7. Spread each piece of dough out on a baking sheet and brush each with ½ tbsp olive oil, top with ¼ cup garlic mashed potatoes and two slices of mozzarella cheese.
  8. Place in the oven and bake for 25 minutes.
  9. Remove from the oven and top with the crumbled bacon and parmesan cheese.
