Ingredients

  • 6 large russet potatoes (about 5 lbs)
  • 1/2 cup unsalted butter
  • 1/2 cup Half & Half
  • 1/2 cup sour cream
  • 1 cup cheddar cheese divided
  • 1 tsp salt adjust to taste

Toppings

  • 1 cup cheddar cheese
  • 1 cup cooked bacon chopped
  • 1/2 cup green onions chopped

Instructions

  1. Preheat the oven to 400°F. Wash the potatoes and prick them all over with a fork. Place them in the preheated oven and bake for about 45-60 minutes, or until they are fork-tender.
  2. Remove the potatoes from the oven and let them cool for a few minutes. Reduce the oven temperature to 350°F.
  3. Cut the potatoes in half lengthwise and scoop out the flesh into a large bowl.
  4. Add the butter, half & half, and sour cream to the potatoes, then mash them up. Add one cup of cheese, season the mixture, and stir to combine.
  5. Transfer the potato mixture to a greased 9x13 inch casserole dish. Add the bacon and remaining cheese on top.
  6. Cover the dish with foil and bake at 350°F for 20 minutes. Remove the foil and bake for an additional five minutes, or until the top is nice and golden. Garnish with green onions and enjoy!
