Description

This Matcha Boba Tea starts by whisking matcha powder with boiling water to blend it thoroughly and create a smooth, frothy green tea mixture. The tapioca pearls are cooked separately until chewy and then combined with a sweetener such as agave syrup. The pearls sit at the bottom of a tall glass.

Plant-based milk and optionally ice cubes are then added, and the cooled matcha is poured slowly to form layers. The drink is served cold, providing a creamy mouthfeel from the milk, sweetness from the syrup, bitterness and earthiness from the matcha, and a pleasing chewiness from the pearls.

This beverage is best enjoyed fresh within a few hours to maintain boba texture. Precise water temperature and thorough whisking prevent bitterness and lumps in the matcha. Adjust sweetness and milk quantities to suit personal preference.

  • 1 tablespoon agave syrup or maple syrup
  • 1 cup plant-based milk
  • 1 cup ice (optional)

Instructions

  1. In a small bowl, whisk the matcha powder with boiling water for at least one minute. Set this mixture aside and let it cool down.
  2. To a tall glass, add the tapioca pearls and sweetener of choice. Mix well to combine.
  3. Add the ice, if using. Then add the plant-based milk and slowly add the matcha to create a layer.

Notes

  • Use water heated to about 80°C (175°F) rather than boiling to avoid scorched, bitter matcha.
  • Whisk matcha powder thoroughly until thick, frothy, and smooth to prevent lumps.
  • Adjust sweetness by varying the amount of agave or maple syrup to taste.
  • Consume boba tea within 3–4 hours to ensure tapioca pearls remain tender and chewy.
