For the pancake batter:

Prepare the bacon:
- Cook the bacon in a skillet over medium heat until crispy. Drain on paper towels and set aside.
Make the pancake batter:
- In a bowl, whisk together the flour, sugar, baking powder, and salt.
- In another bowl, mix the milk, egg, melted butter, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined (it’s okay if the batter is a bit lumpy).
Cook the pancake muffins:
- Preheat the oven to 375°F (190°C). Grease a muffin tin or line it with muffin liners.
- Pour the pancake batter evenly into the muffin cups, filling them about halfway.
- Bake the muffins for 12-15 minutes, or until a toothpick inserted into the center comes out clean.
Prepare the eggs:
