Menemen Turkish Eggs and Tomatoes Recipe
Description
This Menemen Turkish Eggs and Tomatoes recipe begins by sautéing chopped onions in oil until translucent, followed by cooking green bell peppers until tender. Finely chopped or grated tomatoes are then added and cooked until softened and partially evaporated, creating a saucy vegetable base. Seasoned simply with salt and pepper, eggs are cracked directly into the pan and gently stirred until just cooked, maintaining a moist and spreadable consistency characteristic of menemen.
The dish is traditionally eaten fresh and served with bread, making it a common breakfast or light meal in Turkey. Optional additions include grated kasar cheese added at the end to melt, or feta sprinkled on top, which add richness and variation to the flavor.
Leftovers can be stored in an airtight container for up to two days and reheated gently either on the stove or in a microwave to preserve texture and avoid drying out the eggs.
Ingredients
- 2 tbsp olive oil or vegetable oil
- 1 yellow onion chopped
- 1 green bell pepper chopped
- 4 Roma tomato finely chopped or grated
- 1/2 tsp salt
- 1/4 tsp black pepper
- 3 egg
Instructions
- Heat oil in a pan over medium heat.
- Saute onion until translucent. Add in green pepper and cook until soft.
- Add in the tomatoes and cook, stirring occasionally until they are soft and some of the water is evaporated.
- Season with salt and pepper.
- Add the eggs to the tomatoes. Cook and stir occasionally until the eggs are just cooked and mixed with the tomatoes.
- Serve immediately with bread.
Notes
- For a cheese variation, add sliced or grated kasar cheese at the end and stir until melted.
- Feta or white cheese can be sprinkled on menemen just before serving as an alternative.
- Eggs may be whisked with salt and pepper before cooking to achieve a fully mixed and creamy texture.
- Stir eggs gently and frequently during cooking to prevent sticking and maintain spreadable consistency; avoid overcooking.
- Menemen is best eaten fresh but can be stored in an airtight container for up to two days.
- Reheat leftovers slowly in a pan over medium heat or use a microwave, stirring occasionally to retain moisture.
