Menemen with Sucuk and Feta

Look no further than this menemen with sucuk and feta recipe, for a meal that is both simple and full of flavor.

Ingredients
- 200 g sucuk (spicy Turkish sausage) - approx. 0.4lbs cut into thin rings
- ½ onion diced
- spring onion sliced - omit the green part
- 1 400g (14.5oz can) diced tomatoes or 6 diced fresh tomatoes
- 1 tablespoon cooking oil
- 3 long Turkish bell peppers cut into thin strips- (alternatively, use 1 large bell pepper)
- 3 eggs
- 1 tablespoon paprika powder (smoked or sweet)
- salt and pepper to taste
- ½ teaspoon pul biber (Turkish red pepper flakes) see notes
- 100 g crumbled feta cheese - approx. 0.2lbs
- A handful of chopped parsley

Instructions
- In a pan without any fat, sauté the sucuk, onions, and green onions, for 5 minutes.
- Add the cooking oil, tomatoes, bell peppers, paprika powder, salt, and pepper to the pan, and continue to simmer for 10 minutes or until a thick sauce forms.
- Crack the eggs into a small bowl, season with salt and a bit of Pul Biber (red chili flakes), and lightly stir to break up the yolks a bit.
- Carefully stir in crumbled feta into the egg mixture.
- Pour the egg mixture into the pan and gently stir to scramble the eggs.
- Reduce the heat to a low, and cook covered for about 5 minutes or until the eggs are set but still fluffy then serve.
