Mint & Pea Soup with Bacon

This Mint & Pea Soup with Bacon blends tender peas and diced parsnip into a creamy base, flavored with fresh mint leaves and finished with crisped bacon pieces. The combination produces a smooth texture tempered by the savory crunch of bacon, creating a satisfying balance. The addition of heavy cream enriches the soup, making it filling and warming, suitable for a light lunch or a starter in cooler weather.

Description

Mint & Pea Soup with Bacon features frozen peas and diced parsnip simmered until soft, then blended with heavy cream and fresh mint to create a smooth, velvety soup. Cooking the diced bacon until crispy and adding it as a garnish provides a contrasting texture and a smoky saltiness that complements the freshness of the mint and sweetness of the peas. The soup is seasoned carefully throughout the process to enhance the natural flavors. This approach emphasizes the creamy consistency alongside the crunchy bacon, making each spoonful distinctive.

The soup is served hot in bowls, with crispy bacon sprinkled on top. Additional mint leaves can be added for extra freshness if desired. This dish stands well as a vegetarian-friendly option minus the bacon, or as a light starter in a multi-course meal.

Ingredients

Servings
  • 500 g peas frozen
  • 120 g Bacon diced
  • 200 ml heavy cream
  • 1 parsnip peeled and diced, large
  • 30 ml neutral cooking oil such as vegetable or olive oil, generic cooking oil
  • 10 mint large leaves

Instructions

  1. Cut the bacon into pieces and fry in a pan with some oil until it becomes crispy. Remove the bacon from the pot and set it aside on a paper towel-lined plate to drain excess oil.
  2. Preheat a pot and add a drizzle of oil. Cook the diced parsnip for a few minutes until slightly softened, then add the peas and about 2 liters of water. Bring the mixture to a boil and then reduce the heat to simmer for about 10 minutes until the peas and parsnip are tender.
  3. Add the heavy cream and the chopped mint leaves to the pot and stir well to combine.
  4. Using a blender or immersion blender, purée the mixture until smooth and creamy. It can also be strained through a fine sieve.
  5. Remember to season as you go!
  6. Serve the soup in bowls, garnishing each portion with the crispy bacon pieces.
  7. Optionally, you can also top the soup with additional mint leaves for a fresh touch.
