  • 2 lbs baby potatoes halved
  • 1 packet ranch dressing mix
  • 1 cup unsalted butter melted
  • ½ cup Pepperoncini peppers sliced
  • 1 tablespoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • ¼ cup fresh parsley chopped (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the halved baby potatoes with melted butter, ranch dressing mix, garlic powder, onion powder, smoked paprika, salt, and black pepper.
  3. Spread the seasoned potatoes evenly on a baking sheet.
  4. Top the potatoes with the sliced pepperoncini peppers.
  5. Roast in the preheated oven for 35-45 minutes, or until the potatoes are tender and golden brown, stirring halfway through the cooking time.
  6. Remove the potatoes from the oven and sprinkle with shredded cheddar cheese. Return to the oven for 5 minutes to melt the cheese.
  7. Garnish with freshly chopped parsley before serving.

  • You can use any variety of potatoes, but baby potatoes work best for this recipe.
