White Balsamic Vinaigrette:

  • 2 tbsp canola oil
  • 1 tbsp olive oil
  • 2 tbsp white balsamic vinegar
  • ½ tsp of sugar
  • Sea Salt and Freshly Cracked Pepper to taste

Salad:

  • 4 cups of mixed greens
  • Several Rainier cherries sliced (pits & stems removed)
  • 1 ripe nectarine sliced
  • 2 tbsp pomegranate seeds
  • 2 tbsp feta cheese

Instructions

  1. Make the vinaigrette, by combining the olive oil, canola oil, white balsamic vinaigrette, sugar, sea salt, and freshly cracked pepper, to taste together in a small bowl. Whisk until well combined. Set aside.
  2. Make the salad by combining the mixed greens with sliced cherries, nectarines, pomegranate seeds, and feta cheese.
  3. Drizzle the salad with the well-whisked balsamic vinaigrette, to taste, and toss until well combined. Serve immediately. Enjoy.
