Description

This Mojito recipe starts by muddling fresh mint leaves and lime wedges with rum in a glass or pitcher, bruising the mint and crushing the limes to release flavor. The muddled mixture captures the essential bright and cooling mint and citrus. Ice is added either directly to the pitcher or in individual glasses to prevent dilution of the entire batch.

Simple syrup sweetens the drink, balancing the tart lime and herbal mint. Club soda is then added for effervescence, giving the cocktail a sparkling finish. The result is a well-balanced, revitalizing cocktail with layers of fresh, sweet, and sour elements.

  • 1 cup mint fresh, stems removed, leaves
  • 4 lime sliced into wedges
  • 1 cup rum
  • ½ cup simple syrup *
  • 4 cups ice
  • 6 cups club soda

Instructions

  1. Muddle the mint and limes: Add the limes, mint, and rum to large glass. You can muddle right into the pitcher, but I find adding everything to a large glass is much easier to the limes can't slip away.  Muddle until the limes are crushed and mint leaves are bruised.
  2. Finish the mojito: You can add ice straight to the pitcher now or put ice individually in glasses to avoid having the mojito in your pitcher becoming watered down. Add the muddled mint and lime to your pitcher and rinse the glass with ½ cup soda water. Add the rest of the soda to the pitcher along with the simple syrup, mix with a large spoon, and serve.

Notes

  • Make simple syrup by simmering equal parts sugar and water until dissolved; cool before using.
  • For a stronger mint flavor, blend mint leaves and lime juice with remaining ingredients rather than muddling.
