Description

This soup begins by browning ground beef with onion and garlic to build a savory base. Once the beef is cooked and excess fat drained, beef broth, water, diced tomatoes with juice, barley, sliced celery, diced carrot, dried basil, and bouillon cubes are added and simmered for about an hour. Frozen mixed vegetables are introduced near the end to maintain texture without overcooking.

The slow simmering softens the barley so it thickens the soup while the meat and vegetables contribute distinct textures. The diced tomatoes add acidity and body to the broth. This combination results in a robust, balanced soup with a tender bite from barley and vegetables alongside hearty beef flavor.

Ingredients

  • 1 lb beef
  • 1/2 cup onion *chopped
  • 1 garlic minced, clove
  • 4 cups beef broth
  • 3 cups water
  • 14 oz diced tomatoes *do not drain can
  • 1/2 cup barley Quaker brand is what we use, medium
  • 1/2 cup celery *sliced
  • 1/2 cup carrot diced
  • 2 beef bouillon cube
  • 1/2 teaspoon basil dried
  • 9 oz mixed vegetables

Instructions

  1. In a 4 quart saucepan or dutch oven, brown the ground beef.
  2. Add onion and garlic.
  3. Cook until the onion is tender; drain fat.
  4. Add remaining ingredients, minus the frozen vegetables.
  5. Cover and bring to a boil.
  6. Reduce heat, simmer about 50-60 minutes, stirring occasionally.
  7. Add frozen vegetables and cook about 10 more minutes, or until vegetables are tender.
  8. Add additional water or extra can of tomatoes if soup becomes too thick upon standing. Enjoy!
