Monterey Chicken

This mouthwatering Monterey chicken is slathered in tangy barbecue sauce, covered in melty cheese, and topped with smoky bacon and sweet tomatoes.

Ingredients
- 4 chicken breasts boneless skinless
- ¼ cup honey
- ¼ cup soy sauce
- 3 tablespoons Worcestershire sauce
- 1 teaspoon garlic minced
- ½ teaspoon salt
- ½ teaspoon pepper
- 8 lices applewood smoked bacon
- ½ cup barbecue sauce
- 1 cup Monterey jack cheese shredded
- 2 roma tomatoes diced
- ¼ cup green onions chopped
Instructions
- Mix ¼ cup honey, ¼ cup soy sauce, 3 tablespoons Worcestershire sauce, 1 teaspoon garlic minced, ½ teaspoon salt, and ½ teaspoon pepper in a large sealable bag or bowl.
- Add 4 chicken breasts to the marinade and marinate for at least an hour or overnight.
- Preheat the oven to 350 degrees Fahrenheit. Place the marinated chicken into a 9x13-inch baking dish. Cover the dish with foil and bake for 30-40 minutes, until the chicken has fully cooked.
- While the chicken is baking, fry 8 slices applewood smoked bacon, roughly chop it, and set it aside.
- Pull the chicken out of the oven, remove the foil, top each chicken cutlet with some of the ½ cup barbecue sauce, cooked bacon, and shredded 1 cup Monterey jack cheese.
- Set the broiler to high and broil the chicken until the cheese is melted and bubbly.
- Garnish with 2 Roma tomatoes chopped and ¼ cup green onions. Serve fresh, and enjoy!
