Moroccan Chicken Couscous with Vegetables

One pot Moroccan Chicken, Couscous and Vegetables is a quick dinner that is done in less than 30 minutes. Healthy, full of warm spices with burst of bright flavor from the cranberries and lemon juice.

Ingredients

  • 2 teaspoons cumin ground
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon cloves ground
  • 1/8 teaspoon ground cayenne pepper
  • 1 teaspoon ground cardamom
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon ground allspice
  • 3 tablespoons olive oil
  • 1 red onion , diced
  • 1 zucchini , diced
  • 1 (14.5 ounce) can garbanzo beans , rinsed and drained
  • 8 ounces chicken breast , chopped
  • 1/2 cup cranberries , chopped
  • 2 teaspoons kosher salt
  • lemon grated zest of one
  • 1 1/2 cups chicken broth
  • 1/2 cup orange juice
  • 1 1/2 cups couscous
  • 3 tablespoons parsley fresh, chopped
  • 1 lemon , juice for finishing

Instructions

  1. In a large heavy bottomed pot, add the cumin, ginger, cloves, cayenne, cardamom, coriander, and allspice on medium heat.
  2. Stir the spices until you start to smell them, then add in the zucchini, onions and garbanzo beans with the oil.
  3. Cook until softened, then add in the chicken breast pieces.
  4. When the chicken is just cooked through add in the cranberries, salt, lemon zest, chicken broth, orange juice and couscous.
  5. Bring the mixture to a boil, stirring to combine.
  6. Once boiling turn the heat off and cover.
  7. Wait five minutes, open the cover, scrape the contents with a fork to gently separate the couscous and add the parsley and lemon juice.
