Calling all mushroom lovers, this simple garlic Mushroom Pasta recipe is perfect for you! In just 25 minutes, make an easy Italian pasta dish with sauteed mushrooms and parmesan cheese to create a delicious meal.

Ingredients
- 8 ounces uncooked spaghetti noodles
- 2 tablespoons unsalted butter
- 2 tablespoons olive oil
- 16 ounces sliced baby bella mushrooms or your favorite mushroom variety
- 1 tablespoon soy sauce or 1 teaspoon salt
- 1 tablespoon minced garlic cloves
- 1 teaspoon dried thyme or 1 tablespoon fresh thyme leaves
- 1 teaspoon black pepper
- ½ cup fresh grated parmesan cheese
Instructions
- Bring a large pot of water to boil.
- Add the spaghetti noodles and cook according to package directions.
- Remove one cup of the pasta cooking water and set it aside before draining the pasta.
- Drain the pasta and set it aside.
- Add the butter and olive oil to a large skillet on the stove over medium-high heat.
- Once the butter has melted, add the sliced mushrooms and soy sauce to the skillet, stir to combine everything in the skillet, then cook for 5 minutes without stirring.
- Add the minced garlic, thyme and black pepper to the skillet with the mushrooms, cook for an additional 3-4 minutes.
- Add ½ - ¾ cup of pasta cooking water to the mushrooms and allow some of the liquid to evaporate, this will take approximately 8-10 minutes.
- Once almost all of the liquid has cooked out of the skillet, add the parmesan cheese and cooked pasta, and toss all of the ingredients together.
- Serve and garnish with additional parmesan cheese and fresh chopped parsley or basil, if you'd like.
Notes
- Avoid submerging the mushrooms in water to wash them, they will absorb the liquid, which can make them soggy. The best way to clean mushrooms is to wipe them clean with a damp paper towel. You can also give them a quick rinse, just make sure to dry them very well.
- To make this recipe vegan, replace the butter with additional extra virgin olive oil. Use a dairy-free parmesan style cheese.
- To make this recipe gluten free, use gluten free spaghetti noodles and replace the soy sauce with tamari, a gluten free soy sauce.
