For the New York Strip Roast

  • 4-5 pound New York Strip Roast
  • 2 tablespoons olive oil
  • 3 tablespoons butter softened
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 tablespoon rosemary fresh, minced
  • 1 tablespoon sage fresh, minced
  • 2 teaspoons garlic minced

For the Horseradish Mustard Sauce

  • 1 cup Creme Fraiche or sour cream
  • 3 tablespoons horseradish
  • 1 tablespoon Dijon mustard
  • 1 teaspoon lemon juice
  • 1 tablespoon milk
  • ½ teaspoon salt
  • ½ teaspoon parsley fresh, minced

Instructions

For the New York Strip Roast

  1. Preheat the oven to 475ºF.
  2. Combine the butter, olive oil, salt, pepper, rosemary, sage, and garlic.
  3. Smear evenly over the New York Strip Roast (see note).
  4. Line a sheet tray with foil. Place a wire cooling rack on the sheet tray.
  5. Place the roast on the wire cooling rack.
  6. Cook for 10 minutes.
  7. Reduce the oven temperature to 375ºF.
  8. Remove roast when meat thermometer registers 135°F for medium rare;145°F for medium doneness. Let stand 15 minutes. (Temperature will continue to rise about 10°-15°F to reach 145°F for medium rare; 160°F for medium.)

Horseradish Mustard Sauce

  1. Combine all the ingredients for the horseradish mustard sauce.
  2. Serve alongside the New York Strip Roast.
