Description
Nigerian Zobo starts by thoroughly washing hibiscus leaves to remove any dirt then boiling them with cloves, sliced lemons, pineapple, cinnamon sticks, and optionally ginger in water. The boiling process infuses the water with tart and spicy flavors from the hibiscus and accompanying spices and fruits. After boiling for about 30 minutes, it's left to cool to allow the flavors to develop further.
The mixture is filtered to remove solids, resulting in a vibrant, ruby-red drink with a distinctive tartness from hibiscus softened by the sweetness from pineapple and warm spices like cloves and cinnamon. It can be served chilled with ice and even diluted with sparkling water for a fizzy version. Garnishes such as orange and cucumber slices enhance the presentation and add subtle fresh notes.
Ingredients
- 2 kg hibiscus leaves
- 100 g cloves
- 4 lemon plural
- 1 pineapple
- 2 ginger optional
- 3 cinnamon stick
- 2 l water
Instructions
- Wash the hibiscus leaves in a clean dish to get rid of the sand, dirt, and debris. Run the faucet repeatedly to rinse twice.
- Slice the ginger, lemons, and pineapple using a cutting board. The cleaned hibiscus should be combined with the remaining ingredients and boiled for 30 minutes in a pot. Let it cool naturally so the flavors infuse.
- Decant or filter the mixture and add ice and sparkling water (optional). Serve and garnish with orange and cucumber for extra flavor.
