Nilagang Baboy (Boiled Pork Soup)
Description
Nilagang Baboy begins by sautéing onions and whole black peppercorns in cooking oil, then lightly browning cubed pork belly or shoulder. The meat is simmered in a flavorful beef or pork broth until tender, infusing the soup with rich pork flavor.
Vegetables added include quartered cabbage, peeled and cubed potatoes, and saba bananas sliced in half. The cooking continues until the potatoes and bananas become tender but maintain shape. The inclusion of saba bananas adds a mild sweetness contrasting the savory broth and pork.
This soup is traditionally served hot with a spicy fish sauce dipping sauce to complement the mild broth and meat. It is a fulfilling dish highlighting tender pork, soft vegetables, and simple seasoning.
Ingredients
- 2 lbs. pork belly or shoulder, cubed
- 1 yellow onion medium
- 1 cabbage quartered, medium
- 2 potato peeled and cubed, medium
- 4 pieces saba banana sliced in half crosswise, ripe
- 6 to 8 cups beef broth or pork broth
- 1 teaspoon black peppercorn whole
- salt to taste
- 3 tablespoons neutral cooking oil generic cooking oil
Instructions
- Heat the cooking oil in a deep cooking pot.
- Once the oil becomes hot, saute the onion.
- Add the whole pepper corn. Continue to cook for 20 seconds.
- Put-in the pork. Cook until the color turns light brown (about 3 to 5 minutes).
- Pour-in the beef or pork broth. Bring to a boil. Simmer for 45 to 60 minutes or until the pork becomes tender.
- Add the saba banana and potatoes. Stir and cook for 12 minutes.
- Put-in the cabbage. Add salt to taste. Stir. Cover and continue to cook for 3 minutes.
- Transfer to a serving bowl. Serve with a spicy fish sauce dipping sauce.
