No-Bake Peanut Butter and Chocolate Chip Granola Bars

A delicious super soft and chewy homemade granola bar that doesn't require any baking!

Ingredients
- 2 cups quick oats
- 1 cup Rice Krispies cereal
- 2 tablespoons coconut oil
- ¼ cup honey
- ¼ cup packed light brown sugar
- ¼ cup creamy or chunky peanut butter
- 1 teaspoons vanilla extract
- 2 tablespoons mini chocolate chips
Instructions
- Combine 2 cups quick oats and 1 cup Rice Krispies cereal in a medium bowl and set aside.
- Add 2 tablespoons coconut oil, ¼ cup honey, and ¼ cup packed light brown sugar to a small saucepan and stir to combine. Bring to a boil over medium heat then turn off the heat and add ¼ cup creamy or chunky peanut butter and 1 teaspoons vanilla extract. Mix until smooth.
- Pour over the oat mixture and stir until evenly combined. It might not seem like there isn't enough liquid, but keep stirring and it will come together.
- Pour it into a greased 8 x 8 x 2-inch pan. Sprinkle 2 tablespoons mini chocolate chips on top and gently press them into the oat mixture.
- Allow the bars to cool completely and set for at least 2 hours before cutting them into 10 bars. Wrap individual bars in plastic wrap, or store them in an airtight container for up to 5 days at room temperature.
