No-Bake S'mores Protein Cheesecake Cups

Chocolate Cheesecake Layer

  • 1/2 cup Greek yogurt Dannon Light and Fit vanilla flavor
  • 1/4 cup cream cheese 1/3 less fat
  • 1/4 cup Greek yogurt plain, non-fat
  • 1/2 coop casein protein powder Cellucor chocolate flavor
  • 1 tbsp Dutch cocoa powder
  • 1/2 tsp vanilla extract

Marshmallow Cheesecake Layer

  • 1/4 cup Greek yogurt Dannon Light and Fit vanilla flavor
  • 1/4 cup cream cheese 1/3 less fat
  • 1/4 cup Greek yogurt plain, non-fat
  • 1/4 cup marshmallow creme fluff
  • 1/2 tsp marshmallow extract
  • 1/2 coop casein protein powder Cellucor brand, vanilla flavor

Crust

  • 2 graham cracker crushed, Honeymaid brand, fat free
  • 2 tsp ghee melted
  • 1/8 tsp cinnamon

Instructions

  1. Mix graham crackers with melted ghee and cinnamon.  Push into the bottom of 4 serving glasses.  Set aside.
  2. In a medium bowl, combine chocolate cheesecake layer ingredients with a hand mixer until smooth.  Layer half of the mixture on top of the crust in the serving glasses.  You can use a piping bag to make this process cleaner and easier.
  3. In a medium bowl, combine marshmallow cheesecake layer ingredients with a hand mixer until smooth.  Layer on top of chocolate cheesecake layer.
  4. Add remaining chocolate cheesecake mixture on top of marshmallow cheesecake layer.
  5. If desired, top with additional marshmallow fluff and toast with a kitchen torch.  Add additional graham cracker crumbs and chocolate shavings as desired.
