Cake:

  • ½ cup quick-cooking oatmeal
  • ¾ cup boiling water
  • ½ cup white sugar
  • ½ cup brown sugar
  • cup flour
  • ½ tsp salt
  • ½ tsp baking soda
  • 1 large egg, beaten
  • ½ cup shortening, melted **You can also use vegetable oil or melted coconut oil

Frosting:

  • 3 tbsp butter, melted
  • ½ cup sweetened coconut flakes
  • ½ cup pecans, chopped
  • cup brown sugar
  • 2 tbsp milk
  • ½ tsp vanilla extract

Instructions

Cake:

  1. Preheat the oven to 350 degrees. Grease and flour an 8x8-inch pan.
  2. Mix the oatmeal with the boiling water, stir and cover.
  3. Mix the remaining ingredients then stir in the oatmeal mixture.
  4. Pour batter into pan and bake 23-25 minutes, or until a tester inserted in the center comes out clean.

Frosting:

  1. Combine all ingredients together and mix thoroughly.
  2. Carefully spread frosting over the top of the cake.
  3. Place under the broiler in the oven until coconut is just browned. Watch very closely – it doesn’t take long.
  4. Cool, slice, and serve. Enjoy.
