Oatmeal Pancakes are delicious wholesome pancakes that are quick and easy to make using a blender for the pancake batter. Whether served for a leisurely weekend breakfast or when you need some quick pancakes for an easy weekday breakfast, the whole family is certain to love these fluffy oatmeal pancakes.

Ingredients
- 1/2 cup white whole wheat flour
- 1/2 cup quick cooking oats
- 1 tablespoon white sugar
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup buttermilk
- 1 teaspoon vanilla
- 2 tablespoons vegetable oil
- 1 egg
- 1/2 cup Chopped pecans or walnuts optional

Instructions
- Place flour, oats, sugar, baking powder, baking soda, salt, buttermilk, vanilla, oil and egg in a food processor or blender and puree until smooth.
- Heat a lightly oiled griddle over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Cook until the edges bubble. With a spatula flip the pancake to the other side and cook until it is golden brown.
Notes
- You can use all-purpose flour if you want. Another option if you have not yet tried white whole wheat flour, try using half all-purpose flour and half white whole wheat flour.I reduced the baking soda to 1/4 teaspoon form the original recipe because the pancakes were browning too quickly. By reducing the baking soda, I was able to get a nice golden brown color in about a minute or two on each side.
