Oatmeal Toffee Chocolate Chip Cookies

These Oatmeal Toffee Chocolate Chip Cookies are loaded with chocolate chips, toffee bits and oatmeal.

Ingredients
- 1 cup butter
- 1 ½ cups packed light brown sugar
- 2 large eggs
- 2 teaspoons vanilla
- 1 teaspoon baking soda
- 3/4 teaspoon salt
- 2 cups flour
- 3 cups old fashioned oats
- 3/4 cup semi sweet chocolate chips
- 1 ¼ cups milk chocolate chips Guittard or Ghirardelli are my favorite
- 1 ½ cups Toffee bits Heath or Skor bits

Instructions
- Combine butter and sugar and beat until light and fluffy (2-3 minutes).
- Add eggs and vanilla and mix until well combined.
- Add baking soda, salt and flour and mix until just combined. Add oatmeal and continue mixing until well combined. Stir in chocolate chips and toffee bits.
- Using a large cookie scoop, drop onto lined cookie sheet. Bake at 350 for 9 to 10 minutes (cookies may still look slightly underbaked) . Remove from oven and let set on cookie sheets for about 3-4 minutes. Do not over bake!
