Ingredients
- 1 2/3 cups blanched almond flour 165 grams
- 2 1/4 tablespoons all-purpose flour 10 grams
- 3 egg whites (90 grams), room temperature
- 1/4 teaspoon cream of tartar 1 gram
- 3/4 cup granulated sugar 150 grams
- 6 ounces blanched almonds toasted and ground to a fine powder
- 2 tablespoons all-purpose flour
- 3 tablespoons coarse sugar 35 grams, optional
- 1/2 teaspoon almond extract 2.5 grams

Instructions
- Preheat the oven to 330°F or (165°C), and line two baking sheets with parchment paper.
- Combine the almond flour and all-purpose flour in a bowl and whisk together. Set aside.
- Add the egg whites and cream of tartar into a clean dry bowl and beat on high until they begin to froth.
- With the mixer running, gradually and slowly add the sugar beating until egg whites turn glossy and form stiff peaks.
- Add the almond extract, then using a spatula, fold in the almond flour mixture until the mixture is smooth and without any egg white streaks.
- Drop dollops of cookie batter using a tablespoon onto baking trays separating each piece by about 1 1/2 inches. Sprinkle some coarse sugar onto the tops.
- Bake for 15 minutes or until golden along the tips.
- Remove macaroons from the oven and allow them to cool on the baking tray for 10 minutes, then transfer them onto a cooling rack.
