  • 1 2/3 cups blanched almond flour 165 grams
  • 2 1/4 tablespoons all-purpose flour 10 grams
  • 3 egg whites (90 grams), room temperature
  • 1/4 teaspoon cream of tartar 1 gram
  • 3/4 cup granulated sugar 150 grams
  • 6 ounces blanched almonds toasted and ground to a fine powder
  • 2 tablespoons all-purpose flour
  • 3 tablespoons coarse sugar 35 grams, optional
  • 1/2 teaspoon almond extract 2.5 grams

Instructions

  1. Preheat the oven to 330°F or (165°C), and line two baking sheets with parchment paper.
  2. Combine the almond flour and all-purpose flour in a bowl and whisk together. Set aside.
  3. Add the egg whites and cream of tartar into a clean dry bowl and beat on high until they begin to froth.
  4. With the mixer running, gradually and slowly add the sugar beating until egg whites turn glossy and form stiff peaks.
  5. Add the almond extract, then using a spatula, fold in the almond flour mixture until the mixture is smooth and without any egg white streaks.
  6. Drop dollops of cookie batter using a tablespoon onto baking trays separating each piece by about 1 1/2 inches. Sprinkle some coarse sugar onto the tops.
  7. Bake for 15 minutes or until golden along the tips.
  8. Remove macaroons from the oven and allow them to cool on the baking tray for 10 minutes, then transfer them onto a cooling rack.
