This is a delicious, authentic Scottish shortbread recipe that is simple to make and delicious to eat. I’ve been making this recipe for many years, the buttery sweet shortbread always turns out perfect.

Ingredients
- 1 cup butter room temperature
- 1 cup cornstarch
- 1 2/3 cups all purpose flour
- 2/3 cup super fine sugar

Instructions
- In a food processor or stand mixer with the paddle attachment, cream the butter and sugar together until light and fluffy.
- Sieve the flour and cornstarch into the butter mixture and mix until the shortbread dough comes together.
- Transfer the dough to a 2 X 8 square pan and press firmly, smoothing the top.
- Prick holes over the surface using a fork, then lightly score the top to resemble the traditional Scottish fingers, 1 1/2 inches by 3 inches in length.
- Place into the oven and bake at 325°F or 325°C for 45-50 minutes, or until golden at the surface.
- Remove the cookies from the oven and cut through over the scored area. Then cover the top with sugar.
- Allow the shortbread to cool in the pan.
