For the Gingerbread:

  • cup butter softened
  • ½ cup sugar
  • 1 cup molasses
  • 1 egg
  • 2 ½ cups all-purpose flour
  • 1 ½ teaspoons baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground ginger
  • 1 teaspoon cinnamon
  • ½ teaspoon ground cloves
  • 1 cup hot water
  • cooking spray

For the Lemon Glaze

  • 1 cup powdered sugar sifted
  • grated rind of one lemon
  • Juice of one lemon
  • 1 teaspoon water
  • ½ teaspoon vanilla extract

Instructions

Make the Gingerbread:

  1. Preheat oven to 350 degrees. Coat a 9-inch square baking dish or pan with cooking spray or grease it well with butter.
  2. Beat the margarine or butter at medium speed until fluffy.
  3. Gradually add the sugar, beating well.
  4. Add molasses and egg and beat well.
  5. In a separate bowl, combine flour, baking soda, salt, ginger, cinnamon and cloves.
  6. Add flour mixture to creamed mixture alternately with water, beginning and ending with flour mixture.
  7. Pour the batter into the prepared pan or dish.
  8. Bake for 40 minutes or until a wooden pick inserted in center comes out clean. Cool in pan for 10 minutes.

For the Lemon Glaze:

  1. While the gingerbread cools slightly, make the glaze.
  2. Combine all ingredients in a saucepan and cook over low heat, stirring frequently, until warm.
  3. Slowly pour over the top of the warm gingerbread.
  4. Serve immediately.

Notes

  • If you prefer, you can offer the lemon glaze on the side rather than pouring it over the gingerbread. 
  • Gingerbread may be made up to 5 days in advance. Store it in an airtight container at room temperature. It should keep for about a week.
  • This recipe is for a soft, old-fashioned gingerbread cake, not to be confused with gingerbread cookies.
