Old Fashioned Peach Cobbler

Peach Filling

  • cup packed brown sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 8 cups ¼-½ inch sliced fresh peaches, peeled
  • cup peach juice, or apple juice
  • 1 tablespoon lemon juice

Biscuit Topping

  • 1 ¼ cup all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 10 tablespoons chilled cubed unsalted butter
  • ¾ cup milk

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit and spray a 9x13-inch or 4-quart baking dish with pan spray and set aside.
  2. Add ⅓ cup packed brown sugar, 1 tablespoon cornstarch, 1 teaspoon ground cinnamon, and ¼ teaspoon ground nutmeg to a small bowl and stir until combined.
  3. In a large bowl stir 8 cups ¼-½ inch sliced fresh peaches,, ⅓ cup peach juice,, 1 tablespoon lemon juice, and sugar mixture together until all the peaches are evenly coated. Set aside.
  4. In a separate large bowl whisk together 1 ¼ cup all-purpose flour, 1 cup granulated sugar, 2 teaspoons baking powder, and ½ teaspoon salt. Add the cubed 10 tablespoons chilled cubed unsalted butter and cut it into the flour mixture with a pastry cutter until the butter is the size of small peas. Add ¾ cup milk and stir until fully combined.
  5. Add the peaches to the bottom of the prepared baking dish and spoon the biscuit topping over top. Bake for 40-45 minutes, or until a toothpick comes out mostly clean with only moist crumbs from the biscuit topping in the center of the dish.
  6. Allow the cobbler to cool for 10-15 minutes before serving. Serve warm with vanilla ice cream or whipped cream.
