One Pot Italian Sausage Tortellini Soup
Description
Italian sausage is first browned and cooked through, creating a savory base with rendered fat. Diced onions sautéed until translucent and minced garlic contribute aroma and sweetness. The addition of canned diced tomatoes, tomato paste, and chicken broth builds a flavorful and slightly thickened broth seasoned with garlic and Italian herbs. This combination creates a hearty and comforting soup base.
Fresh refrigerated cheese tortellini is added to the simmering soup, along with heavy cream and fresh spinach. The tortellini cooks tenderly, absorbing flavors from the broth while releasing its creamy cheese filling. The cream enriches the soup, balancing the acidity from tomatoes and spices. The fresh spinach wilts quickly, contributing color and freshness.
Serving the soup garnished with shaved Parmesan adds a salty umami finish and a slight textural contrast. This soup is suitable as a satisfying meal on its own, combining protein, pasta, vegetables, and dairy in one pot for convenience and bold flavor.
