Oreo Brownies

Ingredients

  • ¾ cup all purpose flour
  • ½ cup cocoa powder
  • ¾ teaspoon salt
  • ½ cup semi sweet chocolate chips
  • ½ cup unsalted butter
  • 1 ¼ cups granulated sugar
  • 2 large eggs plus 1 egg yolk
  • 1 teaspoon vanilla extract
  • 1 tablespoon vegetable oil
  • 16 Oreos

Instructions

  1. Preheat the oven to 350ºF. Line an 8x8 inch baking pan with parchment paper.
  2. In a medium bowl, add the flour, cocoa powder, salt and chocolate chips then mix to combine and set aside.
  3. In a saucepan set over a low heat add the butter and sugar. Heat until the butter has melted, stirring frequently then remove from the heat.
  4. In a large mixing bowl, add the eggs and yolk along with the vanilla and beat until combined. Pour in the hot butter mixture and beat again until combined.
  5. Gradually add the dry ingredients folding them in gently with a rubber spatula. Don't overmix.
  6. Transfer half of the brownie batter into the prepared pan. Add a layer of Oreos- you should be able to fit 12 if using an 8x8 pan.
  7. Transfer the remaining brownie mixture on top of the layer of Oreos. Use an off set spatula to gently smooth the batter into an even layer.
  8. Crush the remaining 4 Oreos and scatter them on top of the brownie batter.
  9. Put the pan in the middle of the preheated oven and bake for 30 minutes after which time the edges of the brownies will look set.
  10. Remove from the oven and allow the brownies to cool in the pan before turning out and slicing into squares.
  11. Serve and enjoy!

  • • It’s important to very gently fold the dry ingredients into the wet ingredients.Do not overmix or your brownies will be dry.
  • • Instead of adding a layer of Oreos you can crush them and fold them into thebrownie batter and bake as one layer.
  • • These brownies bake for 30 minutes, as this will give them the besttexture. For even fudgier brownies, reduce baking by 5-10 minutes.You can check for doneness by inserting a toothpick or a knife into the center;for fudgy brownies, it should come out with moist crumbs, while for cakeyones, it should come out clean.
