Description
Oven Egg and Chips involves cutting potatoes into chips and tossing them with olive oil, salt, and pepper before baking at 200°C (400°F) until they start to crisp, about 35 to 40 minutes. After that, spaces are created among the chips where eggs are cracked in and returned to the oven. Baking the eggs for 3 to 5 minutes results in soft to slightly firmer yolks, accommodating different preferences.
The chips develop a crisp edge from baking in olive oil, but it's important not to overcrowd the tray to avoid steaming. The eggs cook gently in the oven's heat, providing a different texture than frying or scrambling. This technique lets potatoes and eggs cook concurrently with minimal fuss.
This dish serves well as a straightforward breakfast or brunch option. Adding herbs, chili oil, or garlic oil to the chips can customize flavor, and golden-yolk eggs enhance visual appeal. Adequate space on the baking tray ensures crispness and proper egg placement.

Ingredients
- 600 g potato
- 1 tablespoon olive oil
- 4 egg
- 1 pinch sea salt
- 1 pinch black pepper
Instructions
- Preheat your oven to 200°C/180°C(fan)/400°F/Gas 6.
- Wash 600 g Potato and pat dry. Cut them into chips and put them on a large baking tray. Add 1 tablespoon Olive oil and 1 pinch Sea salt and ground black pepper. Mix well and put them in the oven for 35-40 minutes (shaking half way through) until the chips are starting to get crispy.
- Make spaces in the chips and then crack 4 Eggs into the space. Put them back in the oven for 4-5 minutes, depending on how you liked your eggs cooked. For really runny eggs, cook them for 3 minutes.

- Use a large baking tray to allow chips space to crisp and room for eggs to bake evenly.
- Enhance the chips with flavored oils such as chili or garlic oil for extra taste.
