Pandan Mochi Waffles

Pandan Mochi Waffles combine glutinous rice flour and coconut milk with pandan extract to produce a soft, chewy waffle with fragrant notes. The batter is slightly runny, cooked in a waffle iron until lightly browned, and crisps up as it cools. These waffles offer a unique texture blending traditional mochi chewiness with a delicate pandan flavor.

Description

This recipe creates Pandan Mochi Waffles using a batter made from glutinous rice flour, all-purpose flour, potato starch, eggs, coconut milk, and pandan extract. The dry ingredients are combined separately, then gently incorporated into the wet mixture that includes sugar for sweetness. The batter's slightly thin consistency spreads on a preheated waffle iron and cooks for 5-6 minutes until golden.

The resulting waffles have a tender yet chewy texture characteristic of mochi, enriched by the creamy coconut milk and the aromatic pandan extract, which imparts a subtle, sweet, and floral essence. Once removed from the waffle iron, the waffles are soft but develop a pleasant crispness as they cool on a rack.

Best served fresh, the waffles can also be frozen and reheated by microwaving briefly followed by toasting to restore crispness. Their textural contrast and flavor make them an interesting alternative to traditional waffles, suitable for a snack or dessert.
