  • 1 lb ground turkey
  • 1 tablespoon olive oil
  • 1 onion finely chopped
  • 1 cup carrots diced
  • 3 cloves garlic minced
  • 4 cups chicken broth

  • 1 can 14 oz diced tomatoes, undrained
  • 1 can 15 oz chickpeas, drained and rinsed
  • 1 can 15 oz kidney beans, drained and rinsed
  • 1 cup edamame shelled
  • 1 tablespoon chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon Coriander
  • Juice of 1 lime
  • salt and pepper to taste
  • ¼ cup chopped fresh cilantro optional

Instructions

  1. In a large stock pot or Dutch oven, heat a tablespoon of olive oil over medium heat. Add the diced onion, diced carrots, and minced garlic, sautéing until softened.
  2. Add the ground turkey to the pot, breaking it apart with a spoon and cook until browned.
  3. Add in the chicken broth, salsa verde, diced tomatoes, chickpeas, kidney beans, and edamame. Add the ground chili powder, cumin, and coriander to the pot with the turkey.
  4. Bring the mixture to a boil, then reduce the heat to low and let it simmer for at least 30 minutes to allow the flavors to blend together.
  5. Add lime juice, salt, and pepper to taste. Adjust the seasoning as needed.
  6. Simmer for an additional 15-20 minutes until the chili reaches your desired consistency.
  7. Serve with fresh cilantro and a wedge of lime on the side.

Notes

  • For a thicker consistency, you can add a teaspoon of cornstarch mixed with water to the chili and let it simmer for an additional 10 minutes.
