Parsley Pesto Pasta

Ingredients

  • 1 pound Spaghetti
  • ½ cup unsalted roasted almonds
  • 4 cups packed fresh flat-leaf parsley leaves
  • ¾ cup chopped fresh chives
  • ¾ cup extra virgin olive oil
  • ½ cup finely grated Parmesan cheese
  • freshly ground pepper, to taste
  • kosher salt, to taste

Instructions

  1. Cook the pasta in a large pot until al dente. Rinse the noodles very well in cold water so they no longer stick together. Reserve 2 cups of the pasta cooking liquid.
  2. Pulse the almonds in a food processor until smooth. Add parsley, chives, oil and parmesan. Process until smooth. Season the pesto with salt and pepper.
  3. Toss the pasta and pesto in a large bowl. Add the reserved pasta cooking liquid ¼ cup at a time until saucy.
  4. Season with additional salt and pepper and sprinkle the top with parmesan.
