Peach Cobbler

  • 1 pound peaches sliced into wedges
  • 3 Tablespoons golden monk fruit
  • 2 teaspoons lemon juice
  • 1 teaspoon cinnamon
  • 1/4 teaspoon xanthan gum

Low Carb Cobbler Topping

  • 1 cup low carb baking mix
  • 3 Tablespoons golden monk fruit
  • 1/4 teaspoon kosher salt
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 cup milk

Traditional Cobbler Topping

  • 1 cup all-purpose flour
  • 1/2 cup dark brown sugar
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • 8 tablespoons butter salted

No Bake Cheesecake Filling

  • 1 8 ounce cream cheese room temperature
  • 1/3 cup confectioner sugar Swerve brand for sugar free option
  • 1 teaspoon fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup heaving whipping cream

Cones

  • 4-6 Waffle or sugar cones
  • 1 cup white chocolate chips

Instructions

  1. Peach Cobbler
  2. Prepare Keto Peach Cobbler. While cooling make cheesecake filling
  3. No Bake Cheesecake Filling
  4. In a large bowl mix cream cheese with sweetener until incorporated into a light and creamy consistency.
  5. Mix in vanilla and lemon juice.
  6. Slowly pour in heaving whipping cream and mix on low-medium speed until the ingredients begin to hold together. Increase the speed to medium-high and blend until heavy peaks form.
  7. Place cheesecake filling in a piping bag and refrigerate until ready to use.
  8. Waffle Cones
  9. Melt chocolate in a microwave safe bowl stirring the chocolate every 30 seconds until smooth. Orplace chocolate in a double boiler. Add 1 cup of water to the bottom of the pan. Heat to a simmer. Add white chocolate chips to the upper pot and stir until chocolate is smooth. Remove from heat.
  10. Cool chocolate slightly, then place chocolate in a pastry bag.
  11. Pipe a small portion of chocolate on the inside of the waffle cone, Spread with a spoon or pastry brush with a thincoating of the chocolate on the inside of the waffle cones.
  12. Set waffle cones on a baking sheet lined with parchment paper to harden.
  13. Assemble Peach Cobbler Cheesecake Cones
  14. Depending if you use a waffle cone or sugar cone, in layers add 2-3 tablespoons of the cheesecake filling to the prepared waffle cone. 
  15. Next, add 3-4 tablespoons of the prepared peach cobbler.
  16. Repeat the layers.
  17. Pipe remaining white chocolate over the wafflecones or top with crushed graham crackers, nuts, mini chocolate chips if desired.
  18. Enjoy right away.

Notes

  • Nut free Low Carb Baking Mix for cobbler topping.
  • Purchase Sugar Free Waffle cones to keep this recipe lower carb.
  • Traditional Cobbler Topping Ingredients; all purpose flour, dark brown sugar, cinnamon, nutmeg and salted butter.
  • Plastic baggies can be used in place of a pastry bag. Snip off the corner and squeeze gently.
  • Macronutrients will change based on ingredients used.
