This Peaches and Cream recipe is a great way to use ripe peaches in the ultimate summer dessert. Mix fresh peaches in a vanilla-infused cream.

Ingredients
- 4 ripe peaches
- 8 tablespoons heavy cream double cream, whipping cream or half and half
- 1 tablespoon white granulated sugar
- 1 teaspoon vanilla extract
- Optional: sprigs of mint to garnish

Instructions
- Wash, then cut the peaches, remove the pits and slice.
- Add the peach slices to a bowl, sprinkle them with the sugar and gently toss to coat. Set aside for 5 minutes until the sugar dissolves.
- Stir the vanilla into the cream (whip slightly if you’d like), then pour over the peaches.
- You can eat them right away, but they taste even better if they sit in the fridge for a few hours for the peaches to infuse the vanilla cream.
- Divide into bowls and serve
