  • 2 cups crushed graham crackers
  • 1 cup unsalted butter melted (2 sticks)
  • ½ teaspoon pure vanilla extract
  • ¼ teaspoon kosher salt
  • cups crunchy peanut butter
  • cups powdered sugar
  • 2 cups semisweet chocolate chips
  • cup creamy peanut butter melted

Instructions

  1. Spray a 9x13-inch baking pan with nonstick spray or line with parchment. Set aside.
  2. Stir together the graham crackers, butter, vanilla, and salt in a large bowl.
  3. Add the crunchy peanut butter and stir again.
  4. Add the powdered sugar and stir again until combined.
  5. Press the mixture into the prepared pan in an even layer. Set aside.
  6. Heat the chocolate chips in a medium-sized bowl in 30-second increments until runny and smooth.
  7. Add the creamy peanut butter to the chocolate, stir to combine, and pour it over the peanut butter layer. Spread the chocolate evenly over the peanut butter layer.
  8. Refrigerate for 30-45 minutes or until the chocolate layer is set.
  9. Cut it into 12-15 bars and serve.

Notes

  • Storage: Store peanut butter bars in an airtight container in the refrigerator for up to 5 days or in the freezer for up to 2 months.
  • Make sure that when these bars are kept in the fridge, they're truly in an airtight container. Any air that gets in can ruin the consistency of the bars.
  • Any brand of peanut butter will work! Just pick your favorite so you know you'll like the final product.
  • These make great lunchbox treats! Just pop one in a little baggie to surprise your little one.
