Peanut Butter Chocolate Energy Balls

A super easy, No Bake, Vegan, and Gluten Free Peanut Butter Chocolate Coconut Energy Ball! Perfect healthy, but sweet treat to give you a boost when you need it!

Ingredients

  • 1/2 cup peanut butter creamy
  • 1/3 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 tablespoon cocoa powder
  • 1 tablespoon cacao powder
  • 1 cup old fashioned rolled oats
  • 3/4 cup unsweetened shredded coconut
  • 1 tablespoon chia seeds
  • 1/2 cup vegan mini chocolate chips or regular if vegan isn't necessary

Instructions

  1. In a medium bowl mix together peanut butter, maple syrup, vanilla, cocoa, and cacao powder. 
  2. Add oats, coconut, and chia seeds to the mixture and mix well until it is well combined. Fold in chocolate chips.
  3. Roll mixture into 1 - 1 1/2 inch balls, approximately 16.  If the mixture is very very sticky, pop it in the freezer for 10 minutes first.  
  4. Store in an airtight container in the fridge for 2 weeks or up to 6 months in freezer.
