Ingredients
- 2 cups pecans finely chopped
- 1 cup Graham cracker crumbs
- 1 cup brown sugar packed
- ½ teaspoon salt
- ½ teaspoon cinnamon
- ¼ cup unsalted butter melted
- ¼ cup maple syrup or corn syrup
- 1 teaspoon vanilla extract
- 12 oz semi-sweet or dark chocolate melted
- 1 teaspoon coconut oil optional, for smoother chocolate
Instructions
STEP NO.1: PREPARE THE FILLING
- In a large bowl, mix chopped pecans, graham cracker crumbs, brown sugar, salt, and cinnamon. Stir in melted butter, syrup, and vanilla extract until fully combined.
STEP NO.2: SHAPE THE BALLS
- Scoop tablespoon-sized portions of the mixture and roll them into balls. Place them on a parchment-lined baking sheet.
STEP NO.3: CHILL THE BALLS
- Refrigerate for 30 minutes to firm up.
STEP NO.4: MELT THE CHOCOLATE
- Melt chocolate and coconut oil (if using) in a microwave-safe bowl in 30-second intervals, stirring in between.
STEP NO.5: DIP IN CHOCOLATE
- Using a fork, dip each pecan ball into the melted chocolate, coating evenly. Let excess chocolate drip off before placing back on the parchment-lined sheet.
STEP NO.6: SET AND SERVE
- Let the chocolate harden at room temperature or refrigerate for 15 minutes. Serve and enjoy!
