Layered semi-sweet and white chocolate flavored with mint and topped with crushed candy canes. This is so easy to make and a holiday classic!

Ingredients
- 12 ounces chopped semisweet chocolate, good quality
- 1 ½ teaspoons peppermint extract, divided
- 1 pound chopped white chocolate, good quality
- 4 Crushed candy canes
Instructions
- Line a 13 x 9 x 2-inch pan with aluminum foil and set aside.
- Melt 12 ounces chopped semisweet chocolate, using a double boiler or in the microwave. If using a double boiler, melt the chocolate over simmering water. If melting in the microwave, melt in a microwave-safe bowl stirring every 30 seconds being careful not to let it burn and clump.
- Stir in ¾ teaspoon peppermint extract and spread the chocolate in a layer on the bottom of the prepared pan. Let cool for about 10 minutes to room temperature or until almost set.
- Repeat the same steps to melt 1 pound chopped white chocolate,. Add ¾ teaspoon peppermint extract. Once melted and smooth spread evenly on top of the set semi-sweet chocolate layer.
- Sprinkle immediately with 4 crushed candy canes and press them gently into the chocolate.
- Set aside and let set to room temperature for about an hour. Break into pieces. Store in an airtight container for one week.
